The DogHouse Forge 6.5" Santoku is designed in honor of the traditional Japanese blade style. The Santoku bōchō means "three virtues" or "three uses". The name fits when you realize how perfectly suited the sheep's foot style blade is for slicing, dicing and mincing. This has made the Santoku style a must-have staple in kitchens worldwide.
Increased blade height allows the knuckle clearance one would expect to find in longer and larger knives. The slightly rounded blade tip allows you to rock the blade smoothly into each cut without feeling like the tip of the knife is on a pivot point. This helps create smooth, confident motions from start to finish of each cut.
AEB-L HC stainless steel allows DHF to design the blade with both high Rockwell hardness abilities and corrosion resistance. This gives the user high performance without the additional maintenance required from pure carbon steel. AEB-L is arguably the nicest culinary stainless steel available today. All AEB-L blades are professionally heat treated and cryo'd between temper cycles for maximum grain refinement and edge retention...that's a slick way of saying that they are super hard and hold a sharp edge for a long time.
